Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan. Bake for 10 minutes.

Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the remaining 1/4 cup of sugar, sour cream, vanilla extract, and flour. Mix until well combined. Add eggs one at a time, mixing on low speed until just incorporated.

Combine and Bake
Pour the cream cheese mixture over the prepared crust. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.

Cool and Chill
Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
