Prepare the Fries

1. Peel and cut the Russet potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes

2. Heat vegetable oil in a large pot over medium-high heat. Once hot, fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Season the Fries

3. While the fries are still hot, season with salt and pepper to taste.

Prepare the Poblano Aioli

4. Roast the poblano pepper over an open flame or in a broiler until charred. Place in a plastic bag to steam for 10 minutes. Peel the skin off, remove seeds, and chop.

Mix the Aioli

5. In a bowl, mix together the chopped poblano, mayonnaise, minced garlic, lime juice, salt, and pepper until smooth.

Serve

6. Serve the fries hot with a side of poblano aioli for dipping.
