Preparation and Assembly

Marinate the Chicken

In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating

In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, black pepper, and salt.

Heat the Oil

In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken

Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.

Fry the Chicken

Carefully place the coated chicken in the hot oil, cooking for about 6-8 minutes per side or until golden brown and cooked through. Remove and place on a wire rack to drain.

Prepare the Sandwich

On a brioche bun, layer the spicy fried chicken, Texas coleslaw, pickles, and drizzle with chili oil. Top with the other half of the bun.
