Prepare the Fries

Peel and cut the potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Cook the Fries

Preheat the oven to 425°F (220°C). Drain the potatoes and dry them with a towel. Toss with olive oil, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Cook the Steak

Season the bavette steak with salt and pepper. Heat a skillet over medium-high heat and add a little olive oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or longer to your preferred doneness. Let rest for 5 minutes before slicing.

Make the Chimichurri

In a food processor, combine cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until well combined. Adjust seasoning to taste.

Serve

Slice the steak and serve it with fries. Drizzle the cilantro chimichurri over the steak and enjoy!
