    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to create hand-cut fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry with a paper towel. Fry the potatoes in batches until they are golden brown and crispy, about 5-7 minutes per batch.

    Remove the fries from the oil and drain on paper towels. While they are still hot, sprinkle with salt.

    In a bowl, mix together truffle oil, grated Parmesan cheese, and chopped parsley.
