    Caramelize the Onions

    In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Once the onions are caramelized, add the beef broth, dry white wine, bay leaves, and thyme. Bring to a boil, then reduce heat and let simmer for about 20 minutes. Season with salt and black pepper to taste.

    While the soup simmers, preheat your broiler. Place the baguette slices on a baking sheet and toast them under the broiler until golden brown, about 2-3 minutes on each side.

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle generously with provolone and Gruyère cheese.
