Prepare the Spinach

Wash the fresh spinach thoroughly and remove any tough stems. In a large pot, bring water to a boil and add the spinach. Blanch for 2-3 minutes until wilted. Drain and immediately transfer the spinach to a bowl of ice water to stop the cooking process. Once cooled, drain again and squeeze out excess water. Chop the spinach coarsely.

Make the Cream Sauce

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the flour and cook for another minute to form a roux.

Add Dairy

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.

Season and Combine

Add the grated nutmeg, salt, and black pepper to the sauce. Stir in the chopped spinach and cook for an additional 2-3 minutes until heated through.
