Cake Preparation

    Preheat the Oven

    Preheat your oven to 220°C (425°F). Grease four ramekins (6 oz each) with butter and dust with flour, tapping out any excess.

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals until melted and smooth, stirring after each interval. Let it cool slightly.

    Mix Eggs and Sugar

    In a mixing bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is light and thick, about 2-3 minutes.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg mixture and gently fold to combine.

    Add Dry Ingredients

    Sift in the all-purpose flour and salt to the chocolate-egg mixture. Gently fold until just combined, being careful not to overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft. The tops should look set.

    Remove from the oven and let the cakes cool for 1 minute. Run a knife around the edges to loosen them.

    Carefully invert each ramekin onto a plate. Let them sit for a few seconds before lifting the ramekin off. Serve immediately with scoops of vanilla ice cream.
