Directions
- 1
Cook the Pasta
In a large pot of salted boiling water, cook the rigatoni until al dente according to the package instructions. Drain and set aside.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and crushed red pepper flakes, cooking for an additional minute.
- 3
Add Vodka
Carefully add the vodka to the skillet, letting it simmer for about 5 minutes to reduce slightly.
- 4
Make it Creamy
Stir in the crushed tomatoes and heavy cream, mixing well to combine. Allow the sauce to simmer for another 5-7 minutes until thickened.
- 5
Combine with Pasta
Add the cooked rigatoni to the sauce, tossing to coat. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
- 6
Finish with Basil
Remove from heat and stir in the fresh basil. Serve immediately, garnished with extra Parmesan if desired.
