Preparing the Burger Patties

    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

    Mash the Black Beans

    In a large mixing bowl, mash 1 cup of black beans using a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the cooked quinoa, grated carrot, chopped onion, minced garlic, chopped cilantro, cumin, salt, and pepper to the mashed black beans. Mix well to combine.

    Add Binding Ingredients

    Stir in 1 cup of bread crumbs and 1 beaten egg (or flaxseed mixture for a vegan option). Mix until the mixture holds together but is not too wet.

    Form the Patties

    Shape the mixture into 4 equal patties. If the mixture is too crumbly, add a little water. If too wet, add more bread crumbs.

    Cook the Patties

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Cook each patty for about 5-6 minutes on each side, or until golden brown and heated through.

Making the Fries

    Prep the Potatoes

    Preheat your oven to 425°F (220°C). Cut 4 medium potatoes into wedges and place them in a large bowl.

    Season the Potatoes

    Drizzle the potato wedges with 2 tablespoons of olive oil, and sprinkle with paprika, salt, and pepper. Toss well to coat.

    Bake the Fries

    Spread the potato wedges in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are golden and crispy.

Assembling the Burger

    Toast the Buns

    While the fries are baking, toast the burger buns in a skillet or toaster until golden brown.

    Build the Burger

    On the bottom half of each toasted bun, layer a lettuce leaf, a cooked veggie patty, a slice of tomato, pickles, and cheese if desired. Top with the other half of the bun.

    Serve

    Serve the veggie burgers hot alongside the crispy fries.
