Prepare the Pasta

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. This will be used later to adjust the sauce consistency.

    Drain the Spaghetti

    Drain the spaghetti and return it to the pot, keeping it warm.

Prepare the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with black pepper.

Combine and Serve

    Combine Pasta and Pancetta

    Add the cooked spaghetti to the skillet with the pancetta. Toss to combine, ensuring the pasta is coated in the pancetta fat.

    Add Egg Mixture

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, tossing vigorously to combine. The residual heat will gently cook the eggs, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Divide the spaghetti carbonara into bowls and top with additional grated Parmesan cheese and black pepper to taste. Serve immediately.
