Preparing the Salmon

    Marinate the Salmon

    In a bowl, mix the olive oil, lemon juice, minced garlic, salt, and black pepper. Add the salmon fillets to the bowl and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

    Grill the Salmon

    Remove the salmon from the marinade and place it on the preheated grill. Grill each side for about 4-5 minutes, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.

    Prepare the Vegetables

    While the salmon is marinating, wash and trim the asparagus, halve the cherry tomatoes, and slice the zucchini into half-moons.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the asparagus, zucchini, and cherry tomatoes, and season with salt. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Serve the Dish

    Once the salmon is done grilling, remove it from the grill and let it rest for a couple of minutes. Plate the grilled salmon alongside the sautéed vegetables and enjoy!
