Prepare Mousse Base

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk Eggs and Sugar
In a separate mixing bowl, whisk together the eggs and sugar until the mixture is pale and fluffy. This may take about 5 minutes.

Chill Mousse

Transfer to Serving Dishes
Spoon the mousse mixture into individual serving dishes or ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
Prepare Whipped Cream Topping

Whip Cream
In a large mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form.
Serve

Top and Enjoy
Once the mousse is set, remove from the refrigerator. Top each serving with a generous dollop of whipped cream. Optionally, garnish with chocolate shavings or berries, then serve immediately.
