Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and lightly dust them with flour to prevent sticking.

Making the Cake Batter

  1. 3

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring between each, until melted and smooth.

  2. 4

    Whisk Sugar and Eggs

In a separate bowl, whisk together granulated sugar, large eggs, large egg yolks, and vanilla extract until the mixture is pale and fluffy.

  3. 5

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to prevent the eggs from cooking.

  4. 6

    Add Flour and Salt

Sift in the all-purpose flour and add a pinch of salt. Gently fold the mixture until fully combined.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 9

    Cool and Serve

Let the cakes cool for 1 minute before carefully inverting each ramekin onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
