    Make the Marinated Red Onion Jam

    In a skillet, heat olive oil over medium heat. Add thinly sliced red onion and sugar, cooking until the onions are soft and caramelized. Stir in balsamic vinegar and cook until the mixture is thickened. Set aside to cool.

    Prepare the Curry Mayo

    In a small bowl, mix mayonnaise with curry powder until well combined. Set aside.

    Make the Oat Buns

    In a bowl, combine oats, flour, baking powder, and salt. In a separate bowl, whisk the egg and milk together. Gradually mix the wet ingredients into the dry, forming a dough. Shape into buns and place on a baking sheet. Bake at 375°F (190°C) for 15-20 minutes or until golden brown.

    Cook the Lamb

    In a skillet, cook the ground lamb over medium heat until browned and fully cooked, about 8-10 minutes. Drain any excess fat.

    Prepare the Whipped Goat Cheese

    In a bowl, whip the goat cheese until creamy and spreadable. You can add a little milk to achieve the desired consistency.

    Slice the oat buns in half. Spread whipped goat cheese on the bottom half, add a layer of sautéed spinach, a generous scoop of lamb, a spoonful of marinated red onion jam, and a drizzle of curry mayo. Top with the other half of the bun and serve.
