Preparation Instructions
1. Cook Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then cover and simmer for 15 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
2. Prepare Salad Ingredients
In a large bowl, combine the mixed greens, diced avocado, drained mandarin oranges, chopped red onion, and cooked quinoa.
3. Add Cheese and Nuts
Crumble the goat cheese over the salad and sprinkle the Marcona almonds.
4. Make Vinaigrette
In a small bowl, whisk together 3 tablespoons of white balsamic vinegar, the juice of 1 orange, and 2 tablespoons of olive oil. Season with salt and pepper to taste.
5. Toss and Serve
Drizzle the vinaigrette over the salad and gently toss to combine. Serve immediately.
