Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Slice the onion thinly and add it to the skillet. Sprinkle with a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized.

Cook the Mushrooms
In a separate skillet, heat another tablespoon of olive oil over medium-high heat. Add the Portobello mushrooms, gill side down, and cook for 5-7 minutes until tender. Flip and cook for an additional 3-4 minutes.

Assemble the Melt
Preheat your oven's broiler. On each slice of sourdough bread, layer spinach, a Portobello mushroom, caramelized onions, a slice of horseradish Havarti, and then sprinkle with Parmesan cheese.

Broil
Place the assembled sandwiches on a baking sheet and broil in the oven for 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Remove from the oven, let cool slightly, and serve hot.
