    Prepare the Bourbon Glaze

    In a small saucepan, combine bourbon and brown sugar. Cook over medium heat until the sugar dissolves and the mixture thickens slightly. Set aside.

    Caramelize the Onions

    Slice the onion thinly. In a skillet, heat olive oil over medium heat. Add the onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Season with salt to taste.

    Cook the Mushrooms

    In the same skillet, add the portobello mushrooms, gill side down. Brush the tops with the bourbon glaze and cook for about 5-7 minutes on each side until tender. In the last minute of cooking, place a slice of Swiss cheese on each mushroom and cover to melt.

    Make the Black Pepper Mayo

    In a small bowl, mix mayonnaise with black pepper. Adjust seasoning to taste.

    Assemble the Burger

    Spread the black pepper mayo on the bottom half of each burger bun. Place the glazed mushrooms with melted Swiss on top, followed by the caramelized onions. Top with the other half of the bun and serve.
