    Prepare the Short Ribs

    Season the short ribs with salt and black pepper. Heat olive oil in a large pot over medium-high heat and sear the ribs on all sides until browned. Remove from pot and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, carrot, celery, and minced garlic. Sauté until softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Add Stock and Herbs

    Add beef stock, thyme, bay leaves, and return the short ribs to the pot. Bring to a boil, then reduce to a simmer.

    Braise the Short Ribs

    Cover the pot and let it braise on low heat for 12 hours, or until the meat is tender and falling off the bone.

    Prepare the Apple Cider Jus

    In a small saucepan, combine apple cider, honey, and smoked chili flakes. Simmer until reduced by half, then strain and set aside.

    Make Goat Cheese Mashed Potatoes

    Boil and mash potatoes, then mix in goat cheese, salt, and pepper to taste.

    Prepare the Collard Greens

    Sauté collard greens in olive oil, seasoning with salt and pepper until wilted.

    Serve

    Plate the short ribs over goat cheese mashed potatoes, add collard greens on the side, and drizzle with apple cider jus.
