Prepare the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture, warm milk, and melted butter. Mix until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.

Shape the Rolls
Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball. Arrange the balls in a greased baking dish, ensuring they are close together.

Prepare the Topping
In a small bowl, mix together the miso paste, melted butter, and sweet sorghum syrup. Brush this mixture over the tops of the rolls and sprinkle with bronx bagel seasoning.

Cover the dish with a cloth and let the rolls rise for another 30 minutes. Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until golden brown. Serve warm.
