Prepare the Meatloaf

Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, salt, pepper, Worcestershire sauce, and 1/4 cup of ketchup. Mix until well combined.

Shape and Bake

Shape the mixture into a loaf and place it in a greased baking dish. Spread the remaining ketchup over the top. Top with chopped bacon. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).

Cook the Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash and Mix

Add goat cheese, butter, milk, salt, and pepper to the potatoes. Mash until smooth and creamy.

Bacon Green Beans

Cook the Bacon

In a skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings in the skillet.

Sauté the Green Beans

In the same skillet with the bacon drippings, add green beans and garlic. Sauté for about 5-7 minutes until tender. Season with salt and pepper.

Combine

Add the cooked bacon back into the skillet and toss to combine.

Brandy Cream

Make the Brandy Cream

In a saucepan over medium heat, combine heavy cream and brandy. Simmer for about 5 minutes until slightly thickened. Season with a pinch of salt.

Assembly

Serve

Plate a slice of meatloaf, a generous scoop of goat cheese mashed potatoes, and bacon green beans. Drizzle with brandy cream and top with French fried onions.
