Tortillas

    Warm the Tortillas

    In a skillet over medium heat, warm each flour tortilla for about 30 seconds on each side until they are pliable. Keep them warm in a clean kitchen towel.

Slaw

    Prepare the Slaw

    In a large bowl, combine shredded cabbage, grated carrot, and chopped cilantro. In a separate small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour the dressing over the slaw mixture and toss to combine. Set aside for at least 10 minutes to allow flavors to meld.

Herb Sauce

    Make the Herb Sauce

    In a blender or food processor, combine Greek yogurt, fresh herbs, minced garlic, lemon juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste and set aside.

Pickled Red Onions

    Pickle the Onions

    Slice the red onion thinly. In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a simmer, stirring until sugar is dissolved. Remove from heat and add the sliced onions. Let them sit for at least 30 minutes, or refrigerate for up to 1 week.

    Prepare Toppings

    Slice the jalapeño into thin rounds, removing seeds if desired. Chop the fresh cilantro for garnishing.

Assembly

    Assemble the Tacos

    To assemble the tacos, lay a warm tortilla flat, add a generous amount of slaw, a drizzle of herb sauce, pickled red onions, slices of jalapeño, and a sprinkle of fresh cilantro. Fold the tortilla over and enjoy!
