Method
Prepare the Grains

Cook the Quinoa
In a separate saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Set aside to cool.

Prepare the Wheatberries
In another pot, add 1 cup of wheatberries and cover with water. Bring to a boil, then reduce to a simmer and cook for 30-40 minutes, or until tender. Drain and set aside.
Combine Ingredients

Mix Grains
In a large mixing bowl, combine the cooked brown rice, quinoa, and wheatberries. Stir gently to combine.

Add Spinach and Herbs
Chop the fresh spinach, parsley, and basil. Add them to the bowl with the grains.
Dress the Powerbox

Prepare Dressing
In a small bowl, whisk together 2 tablespoons of olive oil, 0.5 teaspoon of salt, 0.5 teaspoon of black pepper, and 2 tablespoons of lemon juice.

Toss the Powerbox
Pour the dressing over the grain and vegetable mixture. Toss gently to ensure everything is well coated.
Serve

Plate the Powerbox
Serve the Powerbox warm or at room temperature in bowls. Enjoy your nutritious blend of ancient grains, fresh spinach, and herbs!
