Toast the Cashews
In a dry skillet over medium heat, toast the 1 cup of cashews for about 5-7 minutes, stirring frequently, until they are golden brown and fragrant. Be careful not to burn them.

In a small bowl, whisk together 2 tablespoons of tahini, 2 tablespoons of soy sauce, 1 tablespoon of miso paste, 2 tablespoons of water, and 1 tablespoon of sesame oil until smooth and creamy.

In a large serving bowl, combine the cooked rice, chopped vegetables, and toasted cashews. Drizzle the tahini sesame-soy dressing over the top and gently toss to combine everything well.
