    Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fish into bite-sized pieces (about 1.5 inches).

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well.

    Mix Wet Ingredients

    In another bowl, whisk together the eggs and milk until smooth. Add this mixture to the dry ingredients and stir until just combined.

Coating and Frying

    Prepare Breadcrumbs

    Place the breadcrumbs in a shallow dish. This will be used for coating the fish pieces.

    Dip each piece of fish into the batter, allowing excess to drip off, then roll it in the breadcrumbs until fully coated. Set aside on a plate.
