Preparation and Cooking

    Prepare the Catfish

    Cut the catfish fillets into bite-sized pieces and set aside.

    Mix the Dry Ingredients

    In a bowl, combine all-purpose flour, cornmeal, Uncle Duey's special seasoning, salt, and black pepper. Mix well.

    Prepare the Wet Mixture

    In another bowl, whisk together the eggs and milk until well combined.

    Combine Mixtures

    Gradually add the wet mixture to the dry mixture, stirring until just combined. The batter should be thick.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

    Fry the Fritters

    Using a spoon, drop spoonfuls of the batter mixed with catfish pieces into the hot oil. Fry for about 3-4 minutes on each side or until golden brown.

    Drain and Serve

    Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with tartar sauce.
