    Prepare the Grits

    In a large pot, bring the chicken broth to a boil. Slowly whisk in the grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.

    Add Cheese and Butter

    Once the grits are cooked, stir in the shredded white cheddar cheese and 2 tablespoons of butter. Season with salt and black pepper to taste. Pour the grits into a greased dish and let cool for about 10 minutes before slicing into cakes.

    Fry the Grit Cakes

    Heat the remaining butter and olive oil in a skillet over medium heat. Once hot, add the sliced grit cakes and cook until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

    Cook the Shrimp

    In the same skillet, add the diced andouille sausage and chopped onion. Sauté until onions are translucent. Add the minced garlic and cook for an additional minute. Then add the shrimp and Creole seasoning, cooking until the shrimp are pink and cooked through.

    Prepare the Cream Sauce

    Stir in the heavy cream and simmer for a few minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.

    Assemble the Dish

    Place a fried grit cake on each plate, top with the sautéed shrimp and andouille mixture, then generously drizzle with the Creole cream sauce. Serve hot.
