Fish Tacos
Method
Preparation Instructions
- 1
Prepare the Spicy Cajun Coleslaw
In a large bowl, combine the shredded cabbage, shredded carrot, mayonnaise, Cajun seasoning, and lime juice. Mix well and set aside in the refrigerator to chill.
- 2
Fry the Mahi Mahi
Heat the oil in a large skillet over medium-high heat. Season the Mahi Mahi fillets with salt and pepper. Once the oil is hot, add the fillets and fry for about 4-5 minutes on each side or until golden and cooked through. Remove from the skillet and drain on paper towels.
- 3
Warm the Corn Tortillas
In a separate skillet, warm the corn tortillas for about 30 seconds on each side until pliable.
- 4
Assemble the Tacos
On each tortilla, place a piece of fried Mahi Mahi, top with a generous amount of spicy Cajun coleslaw, add sliced avocado, and drizzle with remoulade sauce.
- 5
Serve
Serve the tacos with sides of pico de gallo and red beans & rice.
