Cooking Instructions

  1. 1

    Prepare the Base

In a large pot, heat the olive oil over medium heat. Add the andouille sausage and cook until browned, about 5 minutes.

  2. 2

    Cook the Chicken

Add the diced chicken to the pot and cook until no longer pink, about 5-7 minutes.

  3. 3

    Add Vegetables

Stir in the onion, green bell pepper, celery, and garlic. Cook for 3-4 minutes until the vegetables are softened.

  4. 4

    Combine Remaining Ingredients

Add the diced tomatoes, chicken broth, rice, Cajun seasoning, bay leaves, salt, and black pepper to the pot. Stir to combine.

  5. 5

    Cook the Jambalaya

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and liquid is absorbed.

  6. 6

    Add Shrimp and Ham

Fold in the shrimp and diced ham, cover, and cook for an additional 5 minutes until the shrimp are pink and cooked through.

  7. 7

    Serve

Remove bay leaves, garnish with chopped green onions, and serve hot.
