    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from pan, crumble, and set aside.

    Boil the Macaroni

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in the cream cheese, milk, garlic powder, onion powder, salt, and black pepper until smooth. Gradually add cheddar and monterey jack cheese, stirring until melted.

    Combine Ingredients

    Add the cooked macaroni, diced tomatoes with green chiles, crawfish tails, and crumbled bacon to the cheese sauce. Stir until well combined.

    Bake (Optional)

    If desired, transfer the mixture to a baking dish, top with additional cheese, and bake at 350°F (175°C) for 15-20 minutes until bubbly and golden.
