Prepare the Ahi Tuna
Season the Ahi tuna steaks with salt and black pepper on both sides. In a skillet, heat 1 tablespoon of sesame oil over medium-high heat. Sear the tuna for about 1-2 minutes on each side for medium-rare, adjusting time for preferred doneness. Remove from the skillet and let rest.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of sesame oil. Add the mixed vegetables and stir-fry for about 3-4 minutes until they are tender-crisp. Add the cooked rice and stir to combine.

Add the Sauce
Pour the mandarin orange teriyaki sauce over the rice and vegetable mixture. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes until heated through.

Serve the Dish
Slice the seared Ahi tuna steaks into thin slices. Serve the stir-fried rice and vegetables on a plate, topped with sliced tuna. Garnish with sesame seeds and chopped green onions.
