    Prepare the Vegetables

    In a pot, bring water to a boil and add cauliflower florets and squash. Cook for 5-7 minutes until tender, then drain.

    Fry the Potato Crumbles

    Peel and dice the potatoes into small cubes. Heat oil in a frying pan over medium heat. Fry the potato cubes until golden and crispy, around 10-15 minutes. Drain on paper towels.

    Make the Cajun Cream Sauce

    In a saucepan, melt butter over medium heat. Add heavy cream and Cajun seasoning, stirring until combined and simmering. Cook for 5 minutes, then remove from heat.

    Cook the Halibut

    Season halibut fillets with salt, pepper, and drizzle with maple syrup. Heat olive oil in a skillet over medium-high heat. Cook the halibut for 3-4 minutes on each side, until golden brown and cooked through.

    On each plate, place a serving of mashed potatoes, then add the sautéed cauliflower and squash. Top with the maple-seared halibut and drizzle with the Cajun cream sauce. Finish with fried potato crumbles and a sprinkle of fresh parsley.
