    Prepare the Pork

    In a slow cooker, add the pork shoulder, chopped onion, minced garlic, cumin, chili powder, salt, and black pepper. Pour lime juice over the top and set the slow cooker to low for 8 hours or until the pork is tender and easily shredded.

    Make the Creamy Corn Medley

    In a saucepan, combine corn kernels and heavy cream. Heat over medium heat until the corn is heated through. Stir in salt and pepper to taste. Set aside.

    Prepare Garlic Mashed Potatoes

    Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, minced garlic, and mash until smooth and creamy. Season with salt and pepper to taste.

    Assemble the Dish

    Once the pork is cooked, shred it with forks. Serve the shredded pork with creamy corn medley on the side, a generous scoop of garlic mashed potatoes, and drizzle with house BBQ sauce. Garnish with chopped chives.
