Prepare the Fish
Using a sharp knife, slice the Hiramasa (Kingfish) into thin sashimi-style pieces, about 1/4 inch thick. Arrange the slices on a chilled plate.

Prepare the Citrus
Peel the grapefruit and orange with a sharp knife, removing all the white pith. Segment the grapefruit and orange by cutting between the membranes to release the segments. Place the citrus segments over the fish on the plate.

Dress the Dish
Drizzle the extra virgin olive oil evenly over the fish and citrus. Follow with a sprinkle of sea salt for seasoning.

Finish with Garnish
Sprinkle sesame seeds and fresh cilantro over the top for garnish and added flavor. Serve immediately for the best taste.
