Add the Liquid Ingredients
Once the onions are caramelized, pour in the beef broth and dry white wine. Add thyme, bay leaf, salt, and black pepper, and bring the mixture to a gentle simmer. Let it cook for another 20 minutes to allow the flavors to meld.

Prepare the Baguette
While the soup simmers, preheat your oven to 350°F (175°C). Place the sliced baguette on a baking sheet and toast in the oven for about 10 minutes, or until lightly crispy.

Assemble the Au Gratin
Remove the bay leaf from the soup. Ladle the French onion soup into oven-safe bowls or ramekins. Place the toasted baguette slices on top of the soup, then generously sprinkle with Gruyère and Parmesan cheese.
