Calamari with Banana and Jalapeño Peppers

    Prepare the Calamari

    Rinse the cleaned calamari rings under cold water and pat them dry with paper towels. This will ensure that they fry well and are not too watery.

    Prepare the Coating

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well until all the dry ingredients are thoroughly combined.

    Coat the Calamari

    Take the dried calamari rings and dredge them in the flour mixture. Ensure that each piece is well coated and shake off any excess flour.

    Heat the Oil

    In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small piece of the coated calamari into it; if it sizzles, the oil is ready.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy, turning them halfway through for even cooking.

    Prepare the Peppers

    While the calamari are frying, slice the banana and jalapeño peppers. You can adjust the amount of jalapeño based on your heat preference.

    Combine and Serve

    Once the calamari are done frying, remove them from the oil and place them on a plate lined with paper towels to absorb excess oil. In a serving dish, combine the fried calamari with the sliced banana and jalapeño peppers. Garnish with chopped parsley and serve with lemon wedges on the side.
