    Slice the Onion

    Peel and slice the medium onion into thin rings.

    Prepare the Ribeye

    If not pre-sliced, use a sharp knife to shave the ribeye into thin slices.

Cooking

    Grill the Onions

    In a skillet over medium heat, add a little oil and sauté the sliced onions until they are golden brown and caramelized, about 5-7 minutes.

    Cook the Ribeye

    In the same skillet, add the shaved ribeye and cook for about 3-4 minutes, stirring frequently until it is cooked through and slightly browned.

    Melt the Cheese

    Once the ribeye is cooked, place the slices of Cooper white American cheese on top of the meat and cover the skillet to melt the cheese, about 1-2 minutes.

Assembly

    Prepare the Baguette

    Slice the Harvey sesame baguette in half lengthwise and lightly toast it if desired.

    Assemble the Sandwich

    Spread 1 tablespoon of Dijonnaise on each half of the baguette. Layer the cheesy ribeye and grilled onions on the bottom half, and top with pickled jalapeños. Place the other half of the baguette on top.

    Cut the sandwich in half if desired and serve immediately with your favorite side.
