    Prepare the Salmon

    Pat the salmon fillets dry with a paper towel. Season both sides generously with salt, black pepper, and blackening seasoning.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Cook the Salmon

    Place the seasoned salmon fillets in the skillet and cook for 4-5 minutes on each side, or until the salmon is blackened and cooked through (internal temperature of 145°F). Remove from the pan and let it rest.

    Prepare the Salad

    In a large bowl, combine the sliced apples, dried cranberries, chopped pecans, and goat cheese. Drizzle with balsamic vinaigrette and toss gently to combine.

    Serve

    To serve, place a portion of the salad on each plate and top with a blackened salmon fillet. Drizzle extra balsamic vinaigrette over the top if desired.
