Prepare the Bacon
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to catch the drippings.

Prepare Jalapeños
Slice the jalapeños in half lengthwise and remove the seeds for less heat, if desired. Place them aside for later.

Make the Glaze
In a medium mixing bowl, combine the brown sugar, espresso ground coffee, bourbon, freshly cracked black pepper, and sea salt. Mix well until a thick paste forms.

Coat the Bacon
Take each piece of thick-cut bacon and generously coat it with the glaze. Ensure that it is evenly covered on both sides.

Arrange and Bake
Place the glazed bacon on the prepared baking sheet in a single layer. If using jalapeños, place them on the sheet alongside the bacon.

Bake
Bake in the preheated oven for about 25 to 30 minutes, or until the bacon is crispy and caramelized. Keep an eye on it to avoid burning.

Cool and Serve
Remove the bacon from the oven and allow it to cool on a wire rack for a few minutes. Serve warm, optionally garnished with the roasted jalapeños.
