    Cook the Chicken

    In a large pot, add enough water to cover the chicken breasts and bring to a boil. Once boiling, reduce heat to a simmer and cook for about 15-20 minutes until chicken is fully cooked. Remove from heat, drain, and let cool before shredding the chicken.

    Prepare the Ginger Vinaigrette

    In a small bowl, whisk together the fresh ginger, soy sauce, honey, rice vinegar, and sesame oil until combined. Set aside.

    Shred the Chicken

    Once the chicken has cooled, use two forks to shred the chicken into bite-sized pieces.

    Toast the Almonds

    In a dry skillet over medium heat, toast the almonds for about 3-5 minutes until golden brown, stirring frequently to avoid burning. Set aside.

    Fry the Wontons

    In a deep skillet or fryer, heat oil over medium heat. Fry the wonton wrappers until golden and crispy, about 1-2 minutes per side. Drain on paper towels and set aside.

    Combine Ingredients

    In a large mixing bowl, combine the shredded chicken, toasted almonds, and half of the ginger vinaigrette. Toss gently to coat the chicken evenly.

    To serve, place a portion of the chicken mixture on a plate, drizzle with peanut sauce, top with fried wontons, and garnish with chopped green onions. Serve with the remaining ginger vinaigrette on the side.
