    Cook the Bacon

    In a skillet over medium heat, cook the Applewood bacon until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble into pieces.

    Prepare the Vegetables

    Wash the baby iceberg lettuce, and cut it into wedges. Slice the cucumber and halve the cherry tomatoes.

    Make the Blue Cheese Dressing

    In a bowl, combine 1 cup of blue cheese crumbles, 1/2 cup of sour cream, 1/4 cup of mayonnaise, 1 tablespoon of lemon juice, salt and pepper to taste. Mix until well combined.

    Assemble the Salad

    On a plate, place the lettuce wedges. Drizzle with the house-made blue cheese dressing. Top with crumbled bacon, sliced cucumbers, cherry tomatoes, crispy onions, and additional blue cheese crumbles.

    Serve

    Serve immediately as a refreshing side or light meal.
