Prepare the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, minced garlic, salt, and black pepper. Let them marinate for at least 15 minutes.
Grill the Chicken
Place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.
Sauté the Vegetables
In a skillet, heat a little olive oil over medium heat. Add the zucchini, bell peppers, and cherry tomatoes. Sauté for about 5-7 minutes until tender. Stir in the fresh basil.
Cook the Tortelloni
In a large pot, boil water and cook the tortelloni according to package instructions. Drain and set aside.
Combine and Serve
In a large bowl, combine the sautéed vegetables, cooked tortelloni, and vodka sauce. Toss gently. Serve the chicken breasts on top of the primavera and garnish with additional basil if desired.
