    Prepare the Bone Marrow

    Preheat the oven to 200°C (400°F). Place the bone marrow in a roasting pan and roast for about 20 minutes until it is soft and the top is caramelized. Remove and let cool slightly.

    Make the Tartare Mixture

    In a bowl, combine the finely chopped beef tenderloin, chopped cornichons, chives, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Plating

    On a plate, place a generous spoonful of the tartare mixture in the center. Create a small indentation on top and gently place a soft-boiled egg in the middle. Surround with roasted bone marrow and truffled potato rosti.

    Garnish

    Finish with additional chives and a drizzle of olive oil if desired. Serve immediately.
