Fried Calamari

Method

Preparation

  1. 1

    Prepare the Aioli

In a bowl, mix mayonnaise, Old Bay seasoning, garlic powder, and hot sauce. Adjust seasoning to taste and set aside.

  2. 2

    Prepare the Calamari

In a mixing bowl, combine flour, cornstarch, Cajun seasoning, salt, and black pepper. Dip each calamari ring into buttermilk, then coat with the flour mixture.

  3. 3

    Fry the Calamari

Heat vegetable oil in a deep pan over medium-high heat. Fry the calamari in batches until golden brown, about 2-3 minutes. Drain on paper towels.

  4. 4

    Fry the Pickles

In the same oil, fry the pickles until crispy and golden, about 2 minutes. Drain on paper towels.

  5. 5

    Serve

Plate the fried calamari and pickles, squeeze fresh lemon juice over them, and serve with the Old Bay aioli on the side.
