    Prepare Sweet Pea Puree

    In a saucepan, bring water to a boil and add sweet peas. Cook for 2-3 minutes until tender. Drain and transfer to a blender. Add olive oil, salt, and pepper, then blend until smooth. Set aside.

    Make English Pea Pesto

    In a food processor, combine pine nuts, basil, Parmesan cheese, lemon juice, and a pinch of salt. Pulse until coarsely chopped. With the processor running, drizzle in olive oil until the mixture is smooth. Set aside.

    Cook Ravioli

    In a large pot of boiling salted water, cook cheese ravioli according to package instructions until al dente. Drain and set aside.

    Sear Diver Scallops

    In a skillet over medium-high heat, add a little olive oil. Season diver scallops with salt and pepper. Sear scallops for 2-3 minutes on each side until golden brown and cooked through.

    Assemble the Dish

    On a plate, spread a layer of sweet pea puree. Top with cooked ravioli, then place seared diver scallops on top. Drizzle with English pea pesto and garnish with extra Parmesan if desired.
