Pretzel Dough

    Activate Yeast

    In a small bowl, combine warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and stir until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape Pretzel Sticks

    Once the dough has risen, punch it down. Divide it into 12 equal pieces, roll each piece into a long stick shape about 10 inches long.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil.

    Boil Pretzel Sticks

    Carefully drop each pretzel stick into the boiling water, 2-3 at a time, and boil for 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

    Egg Wash & Salt

    Beat the egg and brush it over each pretzel stick. Sprinkle with coarse sea salt.

    Bake

    Preheat the oven to 425°F (220°C) and bake for 12-15 minutes, or until golden brown.

White Queso

    Make Roux

    In a saucepan over medium heat, melt the butter. Once melted, add the flour and stir continuously for about 1-2 minutes to create a roux.

    Add Milk

    Slowly whisk in the milk, continuing to stir until the mixture thickens, about 5 minutes.

    Add Cheeses

    Reduce heat to low and add the shredded cheddar and cream cheese, stirring until fully melted and smooth.

    Season Queso

    If desired, stir in diced jalapeños, salt, and pepper. Keep warm until serving.
