Preparation and Brewing

Mashing the Grains
In a large brew kettle, heat 5 liters of filtered water to approximately 70°C (158°F). Add the Pale Malt, Crystal Malt, and Roasted Barley to the water, and stir well.

Steeping
Maintain the temperature around 65-70°C (149-158°F) for about 60 minutes. Stir occasionally to ensure even extraction of sugars.

Sparging
After steeping, remove the grains and rinse them with additional hot water to collect as much sugar as possible, typically around 2 liters.

Boiling
Bring the liquid (wort) to a boil. Once boiling, add the Cascade Hops and boil for 60 minutes. Add the Centennial Hops in the last 15 minutes of the boil.

Cooling the Wort
After boiling, cool the wort quickly using an immersion chiller or by placing the kettle in an ice bath.

Fermentation
Transfer the cooled wort into a sanitized fermentation vessel. Sprinkle the Ale Yeast on top and seal the vessel with an airlock.

Conditioning
After fermentation (about 1-2 weeks), dissolve the Priming Sugar in a small amount of boiling water. Add this to the beer before bottling to carbonate.

Bottling
Bottle the beer in sanitized bottles and cap them. Store in a dark, cool place for about 2 weeks for carbonation.
