Brewing Directions
- 1
Prepare the Water
Begin by heating 10 liters of water in a large brew kettle to about 70°C (158°F). This will be used for mashing the grains.
- 2
Mash the Grains
Add 5 kg of Pale Malt and 1 kg of Crystal Malt to the heated water, stirring to ensure there are no clumps. Maintain the temperature around 65-68°C (149-154°F) for 60 minutes.
- 3
Sparge the Grains
After mashing, sparge the grains by rinsing them with an additional 10 liters of hot water to collect the wort. This should be done slowly to extract maximum sugars.
- 4
Boil the Wort
Bring the collected wort to a boil. Once boiling, add 100 grams of Cascade hops and boil for 60 minutes. This will add bitterness and flavor to your ale.
- 5
Add the Berries
In the last 10 minutes of the boil, add 500 grams of blackberries. This will infuse the ale with berry flavors and aromas.
- 6
Cool the Wort
After the boil is complete, cool the wort as quickly as possible to around 20°C (68°F) using a wort chiller or an ice bath.
- 7
Fermentation
Transfer the cooled wort to a sanitized fermentation vessel, and pitch (add) the packet of ale yeast. Seal the vessel with an airlock and allow it to ferment for 1-2 weeks at around 18-22°C (64-72°F).
- 8
Bottling
Once fermentation is complete, dissolve 100 grams of priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer in sanitized bottles and cap them.
- 9
Conditioning
Allow the bottles to condition at room temperature for 2 weeks. This will carbonate the ale.
- 10
Enjoy
After conditioning, chill the bottles and enjoy your homemade King Severy Bricktown Berry Ale!
