Fried Pickles

  1. 1

    Prepare the Pickles

Drain the sliced pickles and pat them dry with paper towels.

  2. 2

    Make the Breading

In a bowl, combine flour, cornmeal, salt, and black pepper. In another bowl, whisk together eggs and milk.

  3. 3

    Bread the Pickles

Dip each pickle slice in the egg mixture, then coat with the flour mixture.

  4. 4

    Fry the Pickles

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the breaded pickles in batches until golden brown, about 3-4 minutes. Drain on paper towels.

Pretzel Bites

  1. 5

    Prepare the Dough

In a bowl, dissolve yeast and brown sugar in warm water. Let sit for 5 minutes until foamy. Add flour and mix until a dough forms.

  2. 6

    Knead the Dough

Knead the dough for about 5-10 minutes until smooth. Let rise in a greased bowl, covered, for 1 hour.

  3. 7

    Shape the Pretzel Bites

Preheat oven to 450°F (230°C). Roll dough into ropes and cut into bite-sized pieces.

  4. 8

    Boil and Bake

Dissolve baking soda in boiling water. Boil each pretzel bite for 30 seconds, then place on a baking sheet. Brush with melted butter and sprinkle with coarse salt. Bake for 10-12 minutes until golden.

Battered Green Beans

  1. 9

    Prepare the Green Beans

Trim the ends off the fresh green beans.

  2. 10

    Make the Batter

In a bowl, whisk together flour, cornstarch, baking powder, salt, pepper, and ice-cold water until smooth.

  3. 11

    Fry the Green Beans

Heat oil in a deep fryer or large pot to 350°F (175°C). Dip each green bean in the batter and fry in batches until golden brown, about 3-4 minutes. Drain on paper towels.

Boneless Wings

  1. 12

    Prepare the Chicken

Cut boneless chicken thighs into bite-sized pieces.

  2. 13

    Make the Breading

In a bowl, whisk together flour, salt, and pepper. In another bowl, beat eggs with milk.

  3. 14

    Bread the Chicken

Dip each chicken piece in the egg mixture, then coat with the flour mixture.

  4. 15

    Fry the Chicken

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

  5. 16

    Toss in Sauce

Toss the fried chicken pieces in your choice of wing sauce until evenly coated.

Dipping Sauces

  1. 17

    Prepare the White Queso

In a saucepan over medium heat, combine softened cream cheese, shredded Monterey Jack cheese, and milk. Stir until melted and smooth. Add chopped jalapeños to taste.
