    Prepare the Confit Potatoes

    Peel and dice the potatoes. In a medium saucepan, add potatoes, garlic, butter, and enough water to just cover the potatoes. Simmer on low heat for about 20 minutes until tender, then drain and set aside.

    Grill the Filet Mignon

    Preheat the grill to high heat. Season the filet mignon with olive oil, salt, black pepper, and fresh herbs. Grill the steak for about 4-5 minutes on each side for medium-rare, adjusting time based on your preferred doneness. Remove from grill and let rest.

    Prepare the Creole Vegetable Hash

    In a skillet, heat olive oil over medium heat. Add onions, bell peppers, and zucchini. Sauté for 5-7 minutes until softened. Stir in the creole seasoning and cook for an additional 2 minutes. Season with salt and pepper to taste.

    Serve

    On a plate, arrange the confit potatoes, top with the grilled filet mignon, and serve with the creole vegetable hash on the side.
